I thoroughly enjoy having friends over to cook and have cocktails.
This Carolina BBQ Sauce was the product of a few bottles of wine my bff and I consumed on a hot Louisiana Saturday.
We decided to can some BBQ sauce. We made a gigantic batch and made about 15 pints.
It was a fantastic day.
Here’s the recipe we created.
Dump all the ingredients into a large pot. I use my favorite 15″ Magnalite roaster.

Cook on a low simmer. for about 3-4 hours, stirring occasionally.
Preserve in sterilized jars. If you need a canning tutorial, try youtube.
Carolina BBQ Sauce
1 (114oz or 7lb.2oz.) container of ketchup
1 (64 oz. or 4lb) bottle of ketchup
3/4 gallon Apple Cider Vinegar
2 1/2 cups honey
2lb light brown sugar
1 tbsp. kosher salt
1 tbsp. cayenne
1 tbsp. onion powder
1/2 tbsp black pepper
1 tbsp. ground mustard
1 tsp garlic powder
Add all ingredients to a large pot. Cook on a low simmer for 3-4 hours, stirring occasionally.
Yields 15 pints.
