Cheesy Scalloped Potatoes

This is one of the best side dishes I ever made.

I had some potatoes in my refrigerator that needed to be cooked and my husband wanted me to try something different.

Cheesy scalloped potatoes seemed like a great idea!

I had some leftover ham from the holidays that I diced up and added to the potatoes.

The sauce was luscious and rich.

I first started with the sauce.

I melted some butter and whisked in some flour.

I then added some milk, cream, garlic powder, onion powder, and Cajun seasoning.

I whisked until it thickened slightly.

Drop in the pieces of Velveeta and whisk until cheese is melted and sauce is smooth.

In a buttered 9×13 casserole dish, place sliced potatoes, onions, ham. Season with salt and pepper.

Pour cheese sauce on top.

Bake at 350 degrees for 1 hour covered.

Then uncover the foil and cook under a broiler for about 5 minutes.

(KEEP A CLOSE EYE ON IT UNDER THE BROILER. Every oven is different. )

 

Top with chopped green onions.

Cheesy Scalloped Potatoes

2-3 lbs of potatoes, sliced very thinly (I used Yukon gold) ***I did not peel them because I am lazy.

1 onion, sliced thin

1 cup ham, diced

salt and pepper

1/2 stick butter

1 tbsp. flour

1 cup heavy cream

1 cup milk

1/4 tsp garlic powder

1/4 tsp onion powder

1/2 tsp Cajun seasoning

8 oz Velveeta, cubed

chopped green onions for garnish

Preheat oven to 350 degrees.

Slice the potatoes as thin as you can or use a mandolin. Add the potatoes, onion, ham to a buttered 9×13 casserole dish.

Season well with salt and pepper.

In a small pot over medium heat, melt the butter. Whisk in the flour.

Add cream and milk and seasonings.

Whisk until sauce slightly thickens.

Add Velveeta and whisk until cheese melts and sauce is smooth.

Pour the sauce over the potatoes.

Cover the dish with foil and cook in preheated oven for 1 hour or until potatoes are tender.

Remove foil and cook under broiler for 5 minutes.

(Keep a close eye on it because every oven is different.)

When it’s slightly golden, remove from oven. Garnish with green onions.

Serve.
