Chicken and Sausage Sheet Pan Dinner

I’ve really been trying to eat healthier lately.

As you all know I absolutely hate washing dishes.

So one pot meals and sheet pan dinners are LIFE.

Sheet pan dinners are basically an entire meal cooked on one sheet pan.

This sheet pan dinner was a cinch.

I started by making a marinade for the chicken.

It’s equal parts soy sauce and Italian dressing. Whisk it together.

Pour over chicken thighs (seasoned with Cajun seasoning). Let marinate in fridge for 2-4 hours.

( I did this on my lunch break and pulled it out in the evening to cook.)

 

Slice up 2 zucchini and a red onion and place in a bowl, tossing it with a little olive oil.

Season with salt and a lot of fresh cracked pepper.

 

Place chicken on sheet pan. Discard the rest of the marinade.

Arrange veggies and chunks of smoked sausage around the chicken.

Bake at 400 degrees for about 35-40 minutes or until chicken is cooked.

Fabulous.

This marinade makes the chicken so flavorful!

 

Chicken and Sausage Sheet Pan Dinner

1/2 cup soy sauce

1/2 cup Italian dressing

6 boneless skinless chicken thighs

Cajun seasoning

1 red onion, sliced in chunks

2 zucchini, sliced in chunks

olive oil

salt and pepper

2 links smoked sausage, sliced in large chunks

 

Whisk the soy sauce and Italian dressing. Pour over chicken thighs that are seasoned with Cajun seasoning. Marinate in the fridge for 2-4 hours.

Preheat oven to 400 degrees.

Place zucchini and onions in a bowl. Drizzle with olive oil and seasoning with salt and pepper.

Arrange the chicken thighs on a sheet pan.

Place zucchini, onions, and sausage around the chicken.

Bake for 35-40 minutes or until chicken is cooked.
