One Pot Ground Beef Stroganoff

Raise your hand if you hate washing dishes!

One pot meals are LIFE.

I’ve cooked beef stroganoff before and cooked it with sirloin (delicious).

Today I decided to use ground beef because I had some in my freezer and I thought it would be kid friendly. I also made a CLUTCH decision to cook it all in one pot.

That means noodles cook in the sauce. Risky. WORTH IT.

It turned out DELICIOUS. I knew I had to share it with everyone.

Hope all of you enjoy this one, it was a hit in my house.

I started out browning some ground beef with a little onion, garlic, and mushrooms.

After veggies are tender, add Dijon mustard and Worcestershire and kosher salt.

Cook for an additional 3 minutes or so.

Pour in the beef broth and 1 cup of water.. Bring to a simmer.

Add the egg noodles to the pot. Cook for about 8 minutes or until noodles are cooked, stirring the noodles frequently.

Stir in the sour cream and sprinkle in some Cajun seasoning.

Amazing.

Serve it up. Everybody will LOVE it.

 

One Pot Ground Beef Stroganoff

1 tbsp. olive oil

1 lb ground beef

1 cup yellow onion, finely chopped

2 cloves garlic, minced

8 oz. white button mushrooms, chopped (this ended up being around 1 1/2 cups)

1 tsp kosher salt

1 tbsp. Dijon mustard

1 tbsp. Worcestershire sauce

32 oz container beef broth

1 cup water

12 oz wide egg noodles

1 cup sour cream

Cajun seasoning to taste

 

In a large pot, brown the beef in a little olive oil. Add the onion, garlic, mushrooms and cook until veggies are tender.

Add salt, Dijon, Worcestershire and stir to combine. Cook for an additional 3 minutes or so.

Add broth and water and bring to a simmer.

Stir in  pasta. Cover and cook for about 8 minutes or until pasta is cooked. Stir frequently so noodles don’t stick to the bottom.

When pasta is cooked, turn off the stove. Stir in the sour cream and add Cajun seasoning to taste.
