Prosciutto Wrapped Asparagus

Prosciutto Wrapped Asparagus has all the elegance and no fuss. This is a great side dish to serve when you are having company.

It’s delicious, pretty to look at, and requires barely any prep work.

Here’s how you can make it in a few easy steps:

Get your ingredients out, wash and snap off the tough ends of the asparagus. As you can see this is a larger bunch of asparagus. So I will have to cook it longer vs. the skinnier ones.

Take a slice of prosciutto (it was sliced very thin) and smear marscapone cheese all on it. You can get messy with it if you like. This serves as the glue for the asparagus.

Next take about 3 large asparagus  and roll it up. If you have the skinny ones you may be able to do 5 asparagus per roll.

Place on a cookie sheet, drizzle olive oil on it and fresh cracked pepper. NO SALT. The salt is in the prosciutto.

Bake at 375 degrees for about 20 minutes. If you have smaller asparagus I would not cook as long.

Prosciutto Wrapped Asparagus

1 bunch of asparagus ( I used the large ones), tough ends snapped off

marscapone cheese

about 6 slices of thinly sliced prosciutto

olive oil for drizzling

fresh cracked pepper

 

Preheat an oven to 375 degrees.

Spread a healthy amount of marscapone cheese on a slice of prosciutto. Place about 3 large asparagus on the prosciutto and roll it up. Repeat with the rest of the ingredients.

Place on a cookie sheet and lightly drizzle the asparagus bundles with olive oil. Top with fresh cracked pepper.

Bake for about 20 minutes for asparagus that still has a nice crunch.  If you are using the “skinnier” asparagus shorten the cook time to 15-18 minutes.
