The Best Savory Sweet Potatoes

 

 

We eat a lot of sweet potatoes around here. They are not only delicious, but healthy too!

We mainly bake them in the oven and cover them in butter and cinnamon sugar. (Okay, this may not be THAT healthy).

I was looking to cook them in a more savory way and came up with this delicious spice mix.

Here is what I did…

Cube about 5-6 cups of sweet potatoes.

 

Lay them out in one layer on a sheet pan.

In a small bowl or ramekin, mix together 1 tablespoon brown sugar, 1/2 teaspoon kosher salt, 1/4 teaspoon course black pepper, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder.

Pour 1 tablespoon of olive oil over the sweet potatoes and toss the potatoes with the seasoning.

Top the sweet potatoes with 3 tablespoons of cubed butter and bake at 375 degrees for 40 minutes or until tender.

SO DELICIOUS.

 

The Best Savory Sweet Potatoes

5-6 cups sweet potatoes, cubed

1 tbsp light brown sugar

1/2 tsp kosher salt

1/4 tsp course black pepper

1/2 tsp onion powder

1/2 tsp garlic powder

1 tbsp olive oil

3 tbsp butter, cubed

Preheat oven to 375 degrees. In a sheet pan, drizzle the olive oil over the cubed sweet potatoes. Toss the potatoes with the seasoning mix and spread potatoes in a single layer. Top with cubed butter. Bake for about 40-45 minutes or until tender.
