Cajun Shrimp and Sausage Stir-fry

I threw together this Cajun Shrimp and Sausage Stir-fry with ingredients I found in my fridge. It was fantastic. I served it over jalapeño rice.

Cajun Shrimp and Sausage Stir-fry

1/2 lb shrimp, peeled and deveined

1 link smoked sausage

3 tbsp butter

1 onion, sliced in large chunks

3 cloves garlic, minced

1-2 zucchini, sliced in small pieces

1 jalapeño, minced (seeds and membrane removed)

juice of 1 lemon

 

In a large skillet over medium high heat, brown sausage in a little olive oil.

When sausage gets a little color, move to the outer part of the pan and add the shrimp to the center of the pan. Season the shrimp with salt and pepper.

When the shrimp is cooked, remove it and the sausage from the pan.

Add the butter to the same pan.

Add the veggies to the skillet with the melted butter. Season with salt and pepper.
Cook until desired tenderness. Add shrimp and sausage back to the skillet. Add the juice of one lemon.

Serve over jalapeño rice.
