I love cooking Mexican food. This is a recipe I’ve tried and altered to my liking. It is the absolute cheapest meal to make. 9oz. of chorizo is usually under $2. And potatoes can make any meal stretch!
There are so many good chorizos out there but I just buy this cheap one because it works for us!
Start by sautéing some diced up potatoes in the tiniest amount of olive oil. (chorizo has oil in it) Sauté until about halfway cooked. I seasoned with just a pinch of salt. The chorizo is seasoned!
Then add the chorizo and brown until fully cooked and potatoes are tender but not mushy.
You can use two packs of chorizo if you like it meatier. I will use the leftovers to fry or scramble eggs in for breakfast.
Top it with fresh shredded cheese or Mexican cheese of choice.
Chorizo Con Papas Tacos
1 9oz package of chorizo (use 2 packs if you like it meaty)
2 cups potatoes, (diced) I leave skin on because I’m lazy
tortillas
shredded cheese
1. Sauté potatoes in about a tbsp of olive oil in a nonstick skillet. Add a pinch of salt. Cook until about halfway cooked.
2. Add chorizo. Brown until fully cooked and potatoes are tender but not mushy. Top with cheese in the skillet or when you put it in tortillas. Enjoy!
