Easy Pork Tacos

We have taco night once a week and tonight I felt like changing it up. I cooked a pork roast in the pressure cooker and then finished the shredded meat under the broiler. It made the absolute best tacos!

I seasoned the pork shoulder on all sides with this fiesta ranch mix. Then I browned it in the instant pot with a little olive oil.

I then poured this on top the meat and added about 1/2 cup water. (I scraped the bottom of the pan to get all the flavor). I then pressure cooked it for 1 hour.

Shred the meat and put it in a pan with a couple ladles of the gravy. Put it in the oven under the broiler until bubbly. Watch closely!

Arrange tacos!

Easy Pork Tacos

olive oil

1 Boston butt pork roast (or you can use pork sirloin roast)

1 fiesta ranch seasoning mix

1 (16 oz) jar of Herdez salsa verde

1/2 cup water

Tortillas

Monterey Jack cheese

green onions

1. Season pork with ranch seasoning mix.
2. Brown roast in olive oil in pressure cooker on all sides.
3. Pour salsa over the meat, scrape brown bits off the bottom. Add 1/2 cup water.
4. Pressure cook for 1 hour.
5. Shred meat.
6. Place meat on a sheet pan with a few ladles of gravy. Place in oven under broiler until bubbly. Watch closely!!
7. Make tacos. I sprayed a pan with cooking spray. Added tortillas and cheese, then place the meat on one side of the tortilla. When cheese starts to melt fold the tortilla over. Cook to a light golden brown. I added green onions to mine.
