Easy Slow Cooker Pulled Pork

I’m always looking for easy slow cooker recipes to try during the week. I have two young children and when I get home from work it is nice to have dinner ready so we can spend time outside playing. This is an easy pulled pork recipe that doesn’t require much prep work.

 

Spray the crockpot with some nonstick cooking spray and throw in 2 onions. ( I cut them in large chunks.)

 

Next, place the pork on top the onions. This is about a 4 lb. Boston Butt. I was too lazy to cut off the fat. That is okay. You’ll remove it when you shred the meat.

You can make your own rub, but I’ve been saving time with this stuff. It is the McCormick Grill Mates Pork Rub. It is DELICIOUS. I use it all the time, especially on ribs. You need it in your pantry!

Liberally coat the meat in the rub. Then in a bowl mix together 1 cup of Sweet Baby Ray’s BBQ Sauce with 1/2 cup apple juice and pour over the pork. Place the lid on the slow cooker and cook on Low for 8 hours.

YUM. Now you take the meat out and place it on a plate to slightly cool before you shred it.

While the meat is cooling on the plate, set your slow cooker to HIGH for 30 minutes. Whisk in 2 tbsp. corn starch to thicken this magical meat liquid. This will take around 15 minutes. Taste it. I added Cajun seasoning to taste but we like our food more seasoned. This step can be optional.

Shred the meat, discarding the bone and any fat.

Put the meat back in with the sauce and stir, letting it cook for the remaining 15 minutes or so on the HIGH setting.

Easy Slow Cooker Pulled Pork

4 lb Boston Butt (bone in)

2 small onions (chopped in large chunks)

McCormick Grill Mates Pork Rub

1 cup Sweet Baby Rays BBQ Sauce

1/2 cup Apple juice

2 tbsp. corn starch

Cajun seasoning to taste

 

Spray the slow cooker with nonstick cooking spray then place the onions on the bottom. Next, season the Boston Butt liberally with the rub and place on top of the onions.

In a separate bowl, whisk together the BBQ sauce and apple juice. Pour over the meat.

Place the lid on the slow cooker and cook on LOW for 8 hours.

Remove the meat and place on a plate to slightly cool.

If your slow cooker turns off on it’s own after the 8 hours turn it back to high for 30 minutes. Whisk 2 tbsp. corn starch into the meat liquid to thicken the sauce. This will take about 15 minutes or so. At this point, taste it. We added Cajun seasoning to taste but it is just fine by itself.

Shred the pork and remove the fat and the bone. Place the meat back in the thickened sauce and let it cook for the remaining 15 minutes. Enjoy!
