This prosciutto and goat cheese-wrapped asparagus is such an elegant side dish. You can throw it together in minutes and and makes the prettiest presentation on a plate. I paired mine with a delicious steak but this can literally be served with anything.
I found this all natural Prosciutto at GJ Curbside. I like it because it has no artificial ingredients or preservatives and is minimally processed.
Start by laying out a slice of prosciutto. Take about a teaspoon (generous teaspoon) of goat cheese and place on one end of the prosciutto.
Place about 5 asparagus on top of the goat cheese and roll it up.
Place seam side down on a parchment lined pan.
Just like this.
Drizzle a little olive oil on top, followed by fresh cracked pepper. Place in oven that has been preheated to 375 degrees. Bake for about 18-20 minutes or until prosciutto is crispy and asparagus is tender.
***DO NOT SEASON WITH SALT. Prosciutto is salty and will season the asparagus as it cooks. ***

Prosciutto & Goat Cheese Wrapped Asparagus
Asparagus (Tops)
Preheat oven to 375 degrees.
Place about a heaping tsp of goat cheese on the end of a slice of prosciutto.
Place 5 asparagus on top of the goat cheese.
Roll and place seam side down on a parchment lined baking sheet.
Drizzle with olive oil and top with pepper. Do not add salt. Prosciutto is salty.
Bake for 18-20 minutes or until Prosciutto is crispy and asparagus is tender.
Pairs nicely with a perfectly cooked bone-in ribeye.
