This was easily one of the best pork tenderloins I’ve ever cooked.
Pork tenderloin is so easy to cook. We eat it on a regular basis and I am always trying to cook it in different ways.
This weekend I got my hands on some prosciutto di parma. It is the BEST prosciutto EVER,
Prosciutto is an Italian salt-cured ham. When baked in the oven it becomes a salty, crispy delicacy.
I stuffed a pork tenderloin with garlic and seasoned it with Cajun seasoning.
Then I spread some Apple Bacon Butter made by Couchon Cannery. These folks know how to make some DELCIOUS concoctions.
I topped it with the slices of prosciutto and tucked in the edges. When I pulled this out the oven it was PERFECT.
My first thought was I could serve this to company.
Then, I tasted it.
FLAVOR BOMB. The prosciutto was salt and crispy, followed by the next sweet layer of the apple bacon butter.
Lastly, my taste buds hit the garlicky moist pork.

You should all give this a try. It will be sure to impress!
With a sharp knife, cut little slits into the pork and stuff it with small pieces of garlic.
Season the tenderloin with Cajun seasoning.
Next, take this magical stuff and place some on top of the tenderloin. (I used about half of a jar.)

Next, lay some slices of prosciutto on top of the tenderloin, each slice overlapping slightly.
Tuck the ends under and top with fresh cracked pepper. Bake in a preheated 400 degree oven for about 35 minutes or until cooked to desired doneness. (My tenderloin was large.)
Pull the tenderloin out of the oven and place on a cutting board to rest for about 10 minutes.
Slice it up and serve.
Prosciutto Wrapped Pork Tenderloin
1 pork tenderloin
2 cloves garlic, chopped in chunks
Cajun seasoning
Couchon Cannery’s Apple Bacon Butter (I used about half of the small jar)
Prosciutto (about 4 slices or so, depending on size of tenderloin)
fresh cracked pepper
Preheat oven to 400 degrees.
With a sharp knife, cut small slits in the tenderloin and stuff it with garlic pieces.
Season the tenderloin with Cajun seasoning.
Place the tenderloin on greased sheet pan.
Spoon apple bacon butter on top of the tenderloin.
Place slices of prosciutto on top of the tenderloin, overlapping each slice slightly.
Tuck the ends under and season the top with fresh cracked pepper.
Bake for about 35 minutes, depending on size of tenderloin.
Let tenderloin rest for about 10 minutes before slicing.
