Slow Cooker Shredded Pork Tacos

You MUST add this to your weekly meal plan. This may be one of the best dishes I’ve ever made in the slow cooker. And it was SO. SIMPLE.

I bought a 2-pack of pork sirloin roast. We made roast and gravy with one, and I decided to throw this one in the slow cooker.

The result: taco greatness

 

Here is what I did.

Spray a slow cooker with non-stick cooking spray. Layer the bottom with sliced onions. Cut the pork in large chunks (I do this so the seasoning reaches more surface area…you can totally use pork tenderloin too!) Place the pork on top the onions and season with taco seasoning.

Top with 1 cup salsa verde (medium). The medium spice level gives it a zing without being spicy.

Cook on low for 8 hours.

Your whole house will smell amazing.

Shred the meat.

Time to assemble the tacos.

I put the pork on the tortilla first (straining the juice so you don’t have a soggy taco). Then I topped it with queso fresco cheese, sliced avocado, and chipotle ranch.

Other yummy toppings would be black beans, jalapenos, green onions, sour cream….the options are endless!!!

 

Slow Cooker Shredded Pork Tacos

1 pork sirloin roast or pork tenderloin (cut in big chunks)

1 yellow onion, sliced

1 package of taco seasoning

1 cup salsa verde (medium)

 

Spray a slow cooker with nonstick cooking spray. Lay the sliced onions on the bottom followed by the pork. Season the pork with the taco seasoning.

Top the pork with the salsa and cook on LOW for 8 hours.

After the pork is cooked, shred and place it back in the slow cooker with the sauce.

Possible taco toppings:

sliced avocado

queso fresco

chipotle ranch

jalapenos

sour cream

black beans

green onions
