I love taco soup. It’s so easy to make and it is so filling.
It also freezes well.
I love my taco soup topped with sour cream, cheese, green onions, and tortilla chips (or corn chips).
Here is how I make it.
Taco Soup
2 lbs. ground beef (I use 80/20)
1 onion, chopped
1 bell pepper, chopped (I used orange, any color works)
3 cloves garlic, minced
1 package Taco Seasoning Mix
1 package Ranch dressing seasoning mix
1 can Rotel
1 can beef broth
1 cup water
1 can corn
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
In a large pot brown the meat. Drain the fat.
Add onion, bell pepper, garlic. Sauté until tender.
Add taco and ranch seasoning packs. Stir well.
Add the rest of the ingredients and cook at a low simmer for an hour.
Serve with a dollop of sour cream, cheese, green onions, and tortilla chips.
This freezes well.
