Cajun Chicken Sausage Stir Fry

Cajun Chicken Stir Fry is a super quick meal that you can whip up in under 30 minutes.

At my local grocery store Cannata’s, they make a delicious Cajun Garlic Chicken Sausage. I use it all the time in various dishes.

I’ve been adding it to my stir fry for a few months now and it’s time for me to tell everybody about it!

Here is a picture of the sausage. It’s delicious! I use it in pasta, on poboys, the options are endless!

In a large non stick skillet over medium high heat, squeeze the sausage out of the casing and brown it in a little olive oil. I cooked mine for about 15 minutes or so until it was fully cooked. Remove the meat from the pan and set aside.

I did not drain any fat, there wasn’t that much so I just left it in the pot.

Next, cut open a bag of stir fry vegetables and throw it in the same skillet you cooked the sausage in.  I also added a roughly chopped yellow onion.

Note*** I found these veggies by the bags of salad. It does not include a sauce in the bag. I have used the veggies that came with sauce but it had a strong flavor that I didn’t care for.

Saute’ the veggies over medium high heat until desired tenderness. I still like some crunch to my veggies!

Add the sausage back to the pot and add a 2-3 tbsp. of teriyaki sauce.

This is what I used. Different brands may have different salt levels so taste as you go. You do not want to over-salt this!

Taste it. Then add your salt. I find this sausage is more on the salty side so I season it last.

Serve the stir fry over jalapeno rice. It’s so easy to make! Click HERE for the recipe.

Add the veggies and onion to the same skillet and cook til desired tenderness. I like my veggies to have a little crunch!
