Cheesy Baked Penne

I am trying to be organized and consistently meal plan to make my life easier. I’ve also been stress cooking/eating because of Hurricane Ida and it’s aftermath. Is there anything more comforting than pasta?

Cheesy Baked Penne

3 tbsp olive oil

1/2 yellow onion

3 cloves garlic, minced

1 lb ground beef

1 tsp kosher salt

1/2 tsp black pepper

1/8 red pepper flakes

1 cup beef stock

1/2 tsp dried basil

1/2 tsp dried oregano

32oz marinara

1 lb penne pasta

1 cup ricotta cheese

2 cups shredded mozzarella

1/2 cup Kraft grated parmesan cheese

 

Preheat oven to 375 degrees.
Sauté onion and garlic in olive oil until tender.
Add beef and brown, drain most of the fat.
Season with salt, pepper, pepper flakes.
Add beef broth and reduce liquid by half.
Add basil and oregano.
Pour in marinara.
Cook at a low simmer for at least 30-45 minutes.
Boil pasta in salted water until al dente.
Toss sauce with pasta.
Pour half the pasta in a 9×13 casserole dish. Top with 1/2 cup dollops of ricotta, 1 cup of mozzarella, and 1/4 cup parmesan.
Repeat another layer.
Cover and bake for 45 minutes. Remove cover and bake for 15 minutes.
Serve with crusty bread and a big salad. The perfect dinner that will please everyone.
