Will and I have cooked this several times and finally decided to measure what we were throwing together.
We have a freezer full of deer sausage and I am always looking to cook it in different ways.
Deer sausage lettuce wraps are healthy, low carb, and packed with flavor.
Here is how I made them.
Squeeze the deer sausage out of the casing and brown in a little olive oil.
Drain the fat, add grated garlic, ginger, purple cabbage, shredded carrots. Saute.
Add green onions, oyster sauce, and Trader Joe’s General Tsao Stir Fry sauce.
Such a beautiful meal!
Serve in iceberg lettuce leaves.
In a small ramekin, stir together soy sauce and sugar. Spoon this over the deer sausage in the lettuce wraps.

Deer Sausage Lettuce Wraps.
1 lb deer sausage
1/2 tsp grated ginger
1 tsp grated garlic
1 cup shredded purple cabbage
1/2 cup shredded carrots
1/2 cup green onions, chopped
1/2 tsp oyster sauce
3 tbsp. Trader Joe’s General Tsao Stir Fry Sauce
iceberg lettuce
soy sauce
sugar

Add garlic and ginger. Sauté for 2 minutes.
Add cabbage, carrots and cook for a few more minutes.
Add green onions, oyster sauce, general tsao sauce and cook for an additional few minutes.
Serve in iceberg lettuce leaves and eat as “wraps.”
***optional sauce to spoon over the wraps is soy sauce mixed with a little sugar. It’s delicious, yall!***
***side note, I did not add salt to this dish at all because my sausage is seasoned well and the sauces I added contained salt. Taste as you go.
