Italian-Style Zucchini

I have about a dozen zucchini a friend gave me from his garden.

I love zucchini, usually cooking it simply in a little olive oil or roasting it with other veggies in the oven.

Today I was craving Italian food.

With this dish I decided to start with a little ground pork and it evolved into this Italian delicacy.

Hope you enjoy this as much as I did.

Brown ground pork in a little olive oil then add onion and garlic. Season with salt and pepper.

Next add zucchini. Cover the pot and cook until tender (10-15 minutes). Season with more salt and pepper.

Stir in Italian bread crumbs and Romano cheese.

Yep, it’s delicious.

 

Italian-Style Zucchini

1/2 lb. ground pork

1 small onion, finely chopped

2 cloves garlic, minced

4-5 cups zucchini, chopped

3/4 cup Italian breadcrumbs

1/4 cup Romano cheese

salt and pepper (to taste)

 

In a large skillet brown the pork in a little olive oil over medium heat.

When meat is brown add the onion and garlic and cook for a few minutes or until tender. Season with salt and pepper.

Add the zucchini, season with more salt and pepper and cover the pot. Cook for about 10-15 minutes or until tender.

Stir in the breadcrumbs and cheese.

Serve.
