The Ultimate Cheese Sauce

This cheese sauce is so luscious it literally could go on anything.

I was given a bunch of greens (swiss chard, kale) and I was looking to jazz them up a little.

My go-to sautéed greens usually involves bacon fat, onion, garlic, the greens.

This time I sautéed my greens as usual and just added in some cheese sauce. I can’t tell you how delicious it was. It was like spinach madeline but with swiss chard.

Here’s how I make the sauce.

Start by making a roux. Melt a few tablespoons of butter and whisk in some flour. Whisk for a few minutes.

Add half and half and milk and whisk until smooth and sauce starts to thicken.

Add 2 oz. velveeta and whisk until melted.

Oh la la. Now is when I add some seasoning. Salt, garlic powder, and onion powder to be exact.

Lastly, whisk in 1/2 cup shredded mozzarella cheese until smooth.

Give it a taste. You’ll want to dip a chunk of crusty bread in it.

Or you can add it to vegetables. Here is swiss chard and kale. Spinach would also be fabulous, broccoli too!

The Ultimate Cheese Sauce

2 tbsp. butter, salted

2 tbsp. flour

1/2 cup milk

1/2 cup half and half

2 oz. velveeta, cubed

1/2 tsp kosher salt

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup mozzarella

Over medium heat melt the butter and whisk in the flour. Whisk for a few minutes without burning.

Pour in the milk and half and half and whisk until smooth and sauce starts to thicken.

Add the cubed velveeta and whisk until melted.

Add the seasonings and shredded mozzarella.

Serve over veggies or mix in with sautéed spinach or greens.
