When my husband and I started dating, his Aunt Kay shared with me her recipe for orange scones. They are full of butter and absolutely divine. When satsumas are in season, try this recipe! It works with satsumas too.
Orange Scones
2 cups flour
3/4 cup sugar
1 tbsp baking powder
pinch of salt
6 tbsp butter (cold)
zest of 1 orange
1/2 cup fresh squeezed orange juice
1/3 cup heavy cream
Preheat oven to 350 degrees.
Mix flour, sugar, and baking powder in a bowl.
Use a pastry cutter to cut in the butter until it’s pea sized.
Add juice, zest, and heavy cream and mix until dough is formed.
Form into a circle on a baking pan (I line mine with a baking mat), rolling out to about 1” thick.
Using a pizza cutter or sharp knife, cut into triangles.
Spread on sheet pan leaving a few inches between each scone.
I like to sprinkle additional sugar on top of each scone before baking.
Bake for about 18 minutes.
“pea-sized butter”
perfectly imperfect scones
I love using a baking mat for scones.
So good.
Enjoy!
