Slow Cooker Chicken Parmesan Sliders


I had some chicken breasts in my freezer and I needed to throw together an easy dinner for our busy weeknight. I decided to slow cook the chicken in my favorite dressing/marinade and make sandwiches out of it. Why not a healthi(ish) chicken parmesan slider?

I started with seasoning my chicken with Cajun seasoning and my favorite chicken rub. Then I poured 1/2 cup of this Garlic Expressions vinaigrette on top, followed by a few pats of butter. I then cooked it on high for 4 hours. When it was finished I shredded it up.

Like this.

Time to assemble. I cut open a pistolette and put a mix of Dijon mustard and Mayo on both sides (this can be optional). I think it adds a little something extra. Then add some marinara and parmesan cheese to the top side. Add chicken on the bottom half then a slice of provolone and fresh cracked pepper. Place under the broiler until bubbly.

So simple and good.

1 lb. Chicken breast tenderloins

cajun seasoning (I used Tony’s)

chicken rub (I used TexJoy Rooster Booster)

1/2 cup Garlic Expressions vinaigrette

3 tbsp butter

pistolettes

dijon/Mayo mix

marinara

parmesan cheese

Mozzarella or provolone cheese slices

Place chicken in a slow cooker.
Season with Tony’s and chicken rub.
Pour over Italian vinaigrette and place slices of butter on top.
Cook on HIGH for 4 hours.
Shred the chicken. (This chicken is good for all sorts of dishes!)

To assemble the sandwiches slice the pistolettes and place halves on a sheet pan lined with parchment paper.
Spread Dijon / Mayo mixture on both top and bottom  halves.
On the top half spoon on some marinara and top with parmesan cheese.
On the bottom half add chicken and provolone cheese. Top with fresh cracked pepper.
Place under the broiler until cheese us bubbly and bread is starting to toast. Watch closely! This happens fast!
