Nothing screams comfort food like smothered greens. Whether it’s collards, mustards, turnips or a mix, I still cook them the same. If I don’t have ham on hand a few slices of bacon works just fine.
Smothered Greens
2 tbsp bacon grease
1 cup chopped ham
1 onion, diced
3 cloves garlic, minced
salt, pepper, red pepper flakes (to taste)
1 14oz. can chicken broth
2 (16oz.) bags mixed greens (Southern Blend)
1 tsp sugar
1/4 cup water (if needed)
In a large pot sauté the ham and onion in the bacon grease. When onions are tender add the garlic. Cook for 2 minutes.
Add the broth and greens and seasonings. I like to add a pinch of red pepper flakes.
Smother for about 45 minutes until tender, stirring occasionally. I add the sugar the last 15 minutes of cooking. If you are low on liquid while cooking, add a little water.
