As cooler weather approaches, soup has been on my mind! Chili is at the top of my list. I normally make a big pot and freeze the leftovers. The great debate in my house is ….. beans or no beans? What do you think?
Chili
3 lb. ground beef
1 onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
2 packs chili seasoning mix
1 (14 oz.) can petit diced or crushed tomatoes
1 (14 oz.) can beef broth
1 (15 oz.) can red kidney beans, rinsed and drained
1/2 tbsp cumin
1/2 tbsp chili powder
1 tbsp brown sugar
salt to taste
In a large pot brown the beef then drain the fat.
Add onion, bell pepper, garlic and sauté til tender. Season with salt.
Add chili mix, tomatoes, broth, beans, cumin, and chili powder, salt.
Cook at low simmer for 2 hours. Add brown sugar at the end. (Last 15 minutes or so)
Garnishes: cheese, green onions, sour cream
