Salsa Chicken is the perfect way to change up taco night. You can also use it on nachos, in burritos, enchiladas, or tostadas! You can make it in a slow cooker or bake it in the oven. Super simple and it freezes well too!
Salsa Chicken
chicken breasts (I used 3 large ones)
1 pack taco seasoning mix
1 jar salsa (Mateo’s is my current favorite)
Season the chicken with taco seasoning on both sides. Pour a jar of salsa on top.
Slow cooker : Cover and cook on high for 4 hours or low for 7-8.
Oven: Cover casserole dish and cook at 350 for an hour or until chicken is cooked thru.
Once cooked, shred it up and serve.
***You can add a can of rinsed and drained black beans to this if you desire. You can also stir in sour cream in the end if you like it creamy.
