Sweet Heat Butternut Squash


I love butternut squash. Today I made a sweet and spicy butternut squash that was to die for.

I threw together a spice rub (pretty much the same ingredients as the rub for my Sweet Heat Sweet Potatoes.) I then roasted it in the oven til it was tender and caramelized. Delicious.

Sweet Heat Butternut Squash 

1 large butternut squash  (peeled, seeds scooped out, and chopped into cubes)

drizzle of olive oil

1 tbsp brown sugar

1/2 tsp granulated sugar

1 tsp kosher salt

1 tsp garlic powder

1 tsp chili powder

pinch of cayenne (add more if you like heat)

Place squash cubes in a large bowl.
Drizzle olive oil over squash. Toss.
Mix all the spices together in a ramekin.
Pour over squash, stirring to coat.
(If you have a smaller squash you may not need to use all the rub.) Pour squash onto a parchment lined baking sheet, spreading into a single layer.

Bake at 400 degrees for 30-35 minutes or until tender.
